Cacio e Pepe
A Roman classic, deceptively simple yet profoundly satisfying. Made with just three core ingredients – Pecorino Romano cheese, freshly ground black pepper, and the starchy pasta water – it emulsifies into a creamy, intensely flavourful sauce that coats every strand of pasta. A true test of skill and quality ingredients.
Saltimbocca alla Romana
Meaning "jumps in the mouth," this dish lives up to its name. Tender slices of veal are topped with a slice of savory prosciutto and a fresh sage leaf, then pan-fried briefly in butter and white wine. The result is a harmonious blend of textures and flavours – tender, salty, and aromatic.
Supplì
Rome's beloved street food snack. These crispy, golden fried rice balls are typically filled with tomato risotto, minced meat ragù, and a heart of melting mozzarella cheese. When you break them open, the mozzarella stretches like a telephone wire (supplì al telefono!), a delicious sign of a perfectly made supplì.
